I posted this recipe months ago, but I got a message today from a client I used to meal prepped for asking if I’d share it. She used to request this salad weekly, and it’s hands down one of my all time favorites, so I figured it was worthy of a re-post

Not only is it easy to throw together, but it’s absolutely delicious. I’ve made this for friends, family, and clients many times over the years and it always gets rave reviews.

I didn’t list specific amounts for the ingredients but that was purposeful because it can be made as a single serving, or in a large batch that can last for 3-4 days (it’s even better the next day). If you want to make a large batch, I’d suggest using 2-3 chicken breasts, 1 apple, 2 cups of broccoli, and 1 Tablespoon of oil and mustard. But you can easily adjust the amounts of all the ingredients to suit your specific taste.

For the dressing, I’d suggest olive or avocado oil as they are the most neutral tasting. I personally use stevia to sweeten it a little, but sugar, honey, maple syrup, or even Splenda will work well.
